Commentary

We were contacted by St. Louis BBQ Store (Full Disclosure: they purchase advertising on our web site) to review a brand of charcoal that they have recently started carrying. The brand is Timber which is made in Missouri from American hardwoods like oak and hickory. So, here's how it did!

When we dumped it out for sorting, we found absolutely nothing that shouldn't be in the bag. All the wood was carbonized and the size distribution was pretty good. The amount of chips and dust was particularly low, meaning you get to use more of what you pay for. You can see the numbers in the following table:

Large 3.2 pounds 15.1%
Medium 7.0 pounds 33.8%
Small 9.6 pounds 46.2%
Chips/Dust 1.0 pounds 4.9%

It was reasonably hard to start, taking 5.5 sheets of newspaper in our chimney starter test. While starting, it had a very mild smoke and there was little sparking and popping.

When it comes to our maximum temperature test, it burned at 1085°F, putting it as the third hottest charcoal we've ever tested. During this test, we did experience some pretty big popping and some sparking. There was quite a lot of sparking when starting this charcoal with a MAP-Pro torch, there was a lot of sparking, but this is fairly normal with most lump charcoals.

In lighting the fire for our burn time test, we noticed that it seemed that the fire was fairly slow to spread with this charcoal, even after the fire had gotten close to 400°F. But it burned for a long long time, very high compared to other brands. The ash production was low compared to all the other brands we have tested.

So what we have here is a very very good charcoal. The only slight negative is the relative difficulty in lighting it, but in all other regards, it shines right up there with all the others that we have given our Highly Recommended rating to.
