Baked Potato

One of the easiest things to make on your ceramic charcoal cooker and that is asked about repeatedly on forums are baked potatoes. Here we brine the potatoes before baking them. We don't know why this works, but brined potatoes seem to turn out fluffier inside. And of course, baking the potatoes in a ceramic charcoal cooker will get you a skin with character and a little smokiness.
Ingredients:
- Baking potatoes
- 2 quarts water
- 1 Cup kosher salt
- Olive oil
- Dizzy Pig Raising The Steaks rub
Preparation Instructions:
Dissolve the kosher salt in the two quarts of water. Then immerse your potatoes in the brine solution for about 4 hours. Once they are done soaking, remove them from the brine and dry them gently with paper towels.
Oil the potatoes and then sprinkle with Dizzy Pig Raising The Steaks rub to taste.

Cooking Directions:
Set up your cooker with a raised grid and pizza stone. As you can see above, we are using our medium Big Green Egg with a 12" pizza stone. Stabilize your cooker at 400 degrees. Place the potatoes on the pizza stone and close the cooker. Cook for 1 hour, turning the potatoes once about halfway through the cook, then serve. (We told you it was easy!)
