Commentary

FOGO charcoal recently brought out a new charcoal made from eucalyptus wood. This charcoal is not the first charcoal made from eucalyptus that we have reviewed, so we weren't in the least hesitant about burning eucalyptus in our cookers. Some folks mistakenly think that the wood of the eucalyptus
tree smells like the oil found in the leaves and nuts of the eucalyptus tree, but it does not. It turns out that eucalyptus is a great wood for charcoal. This charcoal comes to us from Brazil, so we have thoughtfully provided you with a map to the right.

The charcoal comes in 17.6-pound bags. When we dumped it out on the ground for sorting, we found the following size distribution, which you can see from the table below. The large amount of chips and dust was a bit disappointing. 18% by weight is High compared to all other brands and nearly one-fifth of the entire bag. The remainig 82% of the bag was distributed nicely between small, medium and large pieces.

Lighting the charcoal was extremely easy, taking only 2.5 sheets of newspaper in our chimney starter test. This is Very Low compared to other brands. While the charcoal was starting in the chimney, there was only moderate sparking and just a few small pops. The fire was relatively slow to spread and the charcoal burned with a very pleasant moderate smoke. We never know how to describe the different smells of different charcoals, but this charcoal doesn't really smell like your typical Central or South American hardwood charcoal, moderately strong but pleasant.

In our maximum temperature test, we dump the charcoal from the chimney starter into a cooker, add more charcoal, let the fire build and then watch for the maximum temperature. While the fire was building and burning, again there was only a small amount of sparking and popping. The charcoal burned at a maximum temperature of 916°F, which is High compared to other brands. Also, while lighting with a MAP/Pro torch, there was quite a bit of popping and sparking, but (repeat after us) always exercise care when using a MAP/Pro or propane torch to light lump charcoal. Once the fire was raging, there was no sparking or popping.

In our burn time test, FOGO burned a moderate length of time, Average compared to other brands. The ash production was Very Low compared to other brands we have tested.

So, to sum it up, this charcoal has a pretty average size distribution with 18% of the bag being unusable, an average burn time with very little ash production. It is extremely easy to light and burns at a pretty high temperature. On top of that, you can order it through Amazon with free shipping. We give it our Above Average rating.

Lighting Instructions

"FOGO, LOW AND SLOW

1 LIGHT YOUR FOGO by building a pyramid with some FOGO lumps and leaving an opening to light the fire.

2 LIGHT PAPER TOWELS lightly soaked with vegetable oil and put them into the bottom of your FOGO charcoal pyramid. Loosely pile more lumps around your growing fire.

3 HAVE A DRINK and enjoy the FOGO fire as it slowly builds and lights up. This should take no more than 15 min, a great time to:

4 PREPARE THE FOOD as well as clean and grease the grill grate to prevent the food from sticking to it during your cook.

5 SEAR THE MEAT so that it gets that nice caramelized crust and locks in the juices and flavor.

6 DON'T BURN IT Use a Food Thermometer to cook your food to the desired doneness and avoid overcooking or burning!
